I like this because it is both witty and makes reference to soup (though I hasten to add, I am not obsessed with latter despite appearances to the contrary on this blog). This was uttered, or anyway written, by the great American journalist H. L. Mencken (1880-1956):

"An idealist is one who, on noticing that a rose
smells better than a cabbage, concludes that it
will also make better soup."
